An all-time favourite, the creamy tomato soup, never fails to provide comfort on a cold, rainy day. It’s like a warm, tasty hug in a bowl!

Ingredients:

  • 1kg ripe tomatoes
  • 1 large onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 tsp sugar
  • Salt and pepper to taste
  • 500ml vegetable stock
  • 150ml heavy cream

Method:

  1. Cut the tomatoes into quarters. Dice the onion and garlic.
  2. Heat the olive oil in a large pot and add the onions and garlic, stirring until soft but not browned.
  3. Add the tomatoes, sugar, salt, and pepper. Stir until the tomatoes start to break down.
  4. Add the vegetable stock and let it simmer for 20-30 minutes.
  5. Blend the soup until smooth, then stir in the heavy cream. Heat for a few more minutes and serve hot.

Hearty Chicken Pot Pie

There’s something about the creamy filling and flaky crust of a chicken pot pie that warms you from the inside out.

Ingredients:

  • 2 sheets puff pastry
  • 400g boneless chicken breasts
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 medium onion
  • 50g butter
  • 2 tbsp flour
  • 500ml chicken stock
  • Salt and pepper to taste

Method:

  1. Preheat your oven to 200°C (390°F).
  2. Cut the chicken into bite-sized pieces. Dice the onion.
  3. In a pot, melt the butter and sauté the onion until translucent. Add the chicken and cook until it’s no longer pink.
  4. Sprinkle in the flour and stir until everything is well coated. Pour in the chicken stock gradually, stirring continuously until the mixture thickens.
  5. Add the mixed vegetables, salt, and pepper. Cook for another few minutes.
  6. Line a pie dish with one sheet of puff pastry. Pour in the chicken mixture, then cover with the second pastry sheet. Trim any excess and press the edges to seal.
  7. Bake for 30-40 minutes, or until the pastry is golden brown.

Ingredients:

  • 2 cups milk
  • 100g dark chocolate
  • 2 tbsp sugar
  • Whipped cream and marshmallows for topping

Method:

  1. Chop the chocolate into small pieces.
  2. In a pot, heat the milk but don’t let it boil. Add the chocolate and sugar, stirring until the chocolate is completely melted.
  3. Serve hot, topped with whipped cream and marshmallows.

Spiced Apple Cider

A warm apple cider with a hint of spice is like autumn in a cup – it’s the perfect way to wrap up a rainy day.

Ingredients:

  • 1L apple juice
  • 4 cinnamon sticks
  • 4 cloves
  • 2 star anise
  • 1 orange, sliced

Method:

  1. Pour the apple juice into a pot. Add the cinnamon sticks, cloves, star anise, and orange slices.
  2. Simmer for 20-30 minutes.
