Ingredients:
- 1kg ripe tomatoes
- 1 large onion
- 2 cloves garlic
- 2 tbsp olive oil
- 1 tsp sugar
- Salt and pepper to taste
- 500ml vegetable stock
- 150ml heavy cream
Method:
- Cut the tomatoes into quarters. Dice the onion and garlic.
- Heat the olive oil in a large pot and add the onions and garlic, stirring until soft but not browned.
- Add the tomatoes, sugar, salt, and pepper. Stir until the tomatoes start to break down.
- Add the vegetable stock and let it simmer for 20-30 minutes.
- Blend the soup until smooth, then stir in the heavy cream. Heat for a few more minutes and serve hot.
Hearty Chicken Pot Pie
There’s something about the creamy filling and flaky crust of a chicken pot pie that warms you from the inside out.
Ingredients:
- 2 sheets puff pastry
- 400g boneless chicken breasts
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 medium onion
- 50g butter
- 2 tbsp flour
- 500ml chicken stock
- Salt and pepper to taste
Method:
- Preheat your oven to 200°C (390°F).
- Cut the chicken into bite-sized pieces. Dice the onion.
- In a pot, melt the butter and sauté the onion until translucent. Add the chicken and cook until it’s no longer pink.
- Sprinkle in the flour and stir until everything is well coated. Pour in the chicken stock gradually, stirring continuously until the mixture thickens.
- Add the mixed vegetables, salt, and pepper. Cook for another few minutes.
- Line a pie dish with one sheet of puff pastry. Pour in the chicken mixture, then cover with the second pastry sheet. Trim any excess and press the edges to seal.
- Bake for 30-40 minutes, or until the pastry is golden brown.

- In a pot, heat the milk but don’t let it boil. Add the chocolate and sugar, stirring until the chocolate is completely melted.
- Serve hot, topped with whipped cream and marshmallows.

A warm apple cider with a hint of spice is like autumn in a cup – it’s the perfect way to wrap up a rainy day.
Ingredients:
- 1L apple juice
- 4 cinnamon sticks
- 4 cloves
- 2 star anise

Method:
